Poached Sea Bream Fillet with Chard-Dill Cream – Recipe | Gastro Fisch Brač
Tender sea bream fillet on a delicate chard and dill cream.

Bring water to a boil in a pot. Clean the potatoes and chard. Add the peeled potatoes to the pot and cook for 15 minutes, then add the chard for another 5 minutes. When the potatoes and chard are tender, drain well. Purée the drained chard and potatoes in a blender with cooking cream. Season with salt, pepper, dried dill and olive oil. Add more cream as needed until the desired consistency is reached.

Bring water to a boil in a shallow pot and add the onion, garlic, carrot, bay leaf and parsley. Season with salt and pepper. Cook for 30 minutes, add olive oil at the end, and poach the sea bream fillet for about 6 minutes (depending on thickness). Carefully remove the fish and serve with the chard cream.
