Pasta with Prawns and Basil Pesto – Recipe | Gastro Fisch Brač

Fine pasta with freshly caught Adriatic prawns and homemade basil pesto.

Preparation

    Pesto: Place fresh basil, grated Parmesan, olive oil (half the amount), sunflower oil, pine nuts or cashews and half of the garlic in a blender or food processor. Blend until smooth. Season with salt and black pepper to taste. If the pesto is too thick, add a little more olive oil.

    Cook the pasta according to the package instructions. When al dente, drain and set aside.

    Heat 2 tablespoons of olive oil in a large pan over medium heat. Add the finely chopped garlic and sauté briefly. Then add the prawns and fry until they turn pink (usually 2–3 minutes). Deglaze with white wine. Once the wine has evaporated, add the cooked pasta to the pan with the prawns.

    Pour the basil pesto over the pasta. Mix well. If needed, add a little pasta cooking water to loosen the pesto. Finally, add the butter and stir well until melted. Serve warm.
